In a medium bowl, mix all ingredients together until well blended.
Heat a pan on the stove to medium heat. Coat pan liberally with oil.
When the pan is heated, place 1" dollops of the fritter mix onto the pan. spreading out the mix until it is about 1/8' thick. Cook until the outside of the fritter becomes opaque, about 2-3 minutes. Flip and cook for another 1-2 minutes.
When both sides are brown and the fritter is cooked through, take off of the heat and transfer to a paper towel-lined plate. Repeat steps 3-4 until the batter is gone.
