Deep-Dish Pizza Muffins

These pizza muffins are little bites that require no cutting! They are great as an appetizer or a snack.
Note: Pizza dough is the easiest to work with when it is at room temperature.

Yields: 12 muffins



Preheat oven to 450⁰F (232⁰C).

Divide pizza dough into 12 balls (about 1.3 oz or 37g each). flatten the balls into 4-5 in. (10-13 cm) pancakes.

Spray a 12-cup regular muffin tray (or 2 6-cup trays, whatever you have on hand) with oil. Place pizza dough pancakes into the tray and shape as necessary. Place in oven for 5 minutes. The dough should be slightly hardened, very puffy, but not cooked all the way through.

Once the dough is ready, put about a teaspoon of sauce into the cups, or until it is filled to just under the top of the muffin. Place on cheese and preferred toppings. Place back into the oven for 7-9 minutes, or until the cheese is melted and the crust is browned.

Let the pizza muffins stand in the muffin tin for 2-3 minutes before serving.
