Fun with Pizza Dough: Chicken Parmesan Pizza Bites

Fun fact: these chicken Parmesan pizza bites were the first recipe that I tried for this blog!

I got inspired by pizza dough (don’t judge!) and decided I was going to test all the different ways I could use pizza dough in everyday cooking. I’ve got a host of other recipes to try, so make sure to stick around to make sure you see those too!

In this case, I had dough and a chicken that I had roasted a couple days prior. I thought of this recipe as a really tasty appetizer or a fun snack. And they smelled really good when I pulled them out of the oven.

But here’s my confession.

The reason why I say it smelled great and not that it tasted great was because I started a small fire in the oven and the only extinguisher we had was an industrial one for the fireplace we had downstairs.

Not something I should be eating.

To make matters worse, the extinguisher left a residue in the oven and everywhere on the first floor of the house. The floors, shelves, coffee pots, cooking utensils and the like we’re all covered in this chalky, somewhat sticky residue.

My mum and I cleaned the oven on four different occasions. That’s right, you heard me correctly. Four different cleanings. I waited two weeks and four cleanings to make these chicken Parmesan pizza bites.

So tl,dr: if you are going to make these chicken Parmesan pizza bites, use a sided cookie sheet so the butter doesn’t drip to the bottom of your oven and start a fire.

I’ll make the mistakes so you don’t have to!

But let me tell you. These little chicken Parmesan pizza bites were worth the wait. The Parmesan on top creates a beautiful crust; the mozzarella inside just melts in with the sauce and the chicken, making just a succulent, juicy inside. I wish I was kidding but these little bites are no joke.

Make them for yourself and experience the sheer tastiness that almost cost me an oven!

Chicken Parmesan Pizza Bites

  • Yield about 16-18 pieces
  • Prep Time: 20 minutes
  • Total Time: 35 minutes

Goods you need

  • 1 lb. pizza dough
  • 4 oz. by weight or 1 cup cooked chicken breast
  • 3 oz. mozzarella cheese, cubed
  • 2/3 cup pasta sauce, divided
  • 4 tbsp. salted butter, melted
  • 1 tsp. Italian seasoning
  • ¼ cup parmesan cheese

Let's get to it!

  1. Preheat oven to 400⁰F.

  2. On a well-floured board, lay out pizza dough. Separate dough into small dough balls, approximately 1 ½” in diameter.

  3. Take the balls and spread them out. Add about a ¼ tsp of sauce, some shredded chicken, and a square of cheese. Make sure you don’t put too much sauce on or they will not stick! Use leftover sauce for dipping.

  4. In a separate bowl, mix butter, cheese, and Italian seasoning.

  5. 5. Place balls on a greased, sided cookie sheet. Baste with the butter and Parmesan cheese mixture.

  6. Bake for 15-17 minutes or until tops are golden brown.

Pro tips

Room temperature pizza dough is a lot easier to work with!
